Before we can understand the history of our The Brewing Botanist Cask Aged Gin, we need to take a brief journey into Opyos' past. This edition has its origins in 2019, when we first put our beer from the collaboration with Wolff Brewing Co, The Brewing Botanist, into two Luxembourgish 'Holz vun Hei' oak barrels. The Red Belgian Strong Ale then rested in these wooden barrels for 6 months before they were refilled with our dry gin. We repeated this process over four years for each batch of The Brewing Botanist.

For 4 years, The Brewing Botanist Cask Aged Gin, which was produced in a limited edition of two barrels, was able to capture the unique characteristics of the oak barrels and the Red Belgian Strong Ale, balancing the subtleties of bergamot, cubeb pepper and toasted wood to create an amber-coloured liquid.

TASTING
NOTES

The Brewing Botanist Cask Aged Gin

NOSE

Warm and vibrant notes of malt, together with nuances of cardamom and cloves as well as hints of cut hay and fruity notes of butter pear, rounded off by slightly smoky flavours of wood.

PALATE

The palate is characterised by exotic aromas of banana and pineapple, followed by a hint of vanilla, which fill the palate and leave a balanced, delicate and creamy texture of a caramel flan.

FINISH

The finish is delicate, smooth and round overall. Nutty flavours linger on the palate, paired with fresh citrus notes and light spicy tones of juniper.

Our The Brewing Botanist Cask Aged Gin is not designed to be mixed with Tonic. Instead, enjoy it neat, at room temperature or on the rocks with a zest of orange. You can also try it as a Negroni. Cheers!
