Production
process

The manufacturing process of Opyos Citrus & Elderflower Gin Liqueur has begun in May 2019. As we are only using fresh grapefruit peels for our classic gin distillation, we always have big amounts of perfectly fine grapefruits on hand, for which we are always trying to find creative ways of reusage. This time, we were thinking ‘why not make a Gin Liqueur out of grapefruit juice?’, and so we have pressed grapefruit juice, serving as a fresh and rather bitter basis for our Citrus & Elderflower Gin Liqueur.

In order to balance this, we were looking for a local component that could compete with the bitterness. This has led us to our neighbours, the Eppelpress, who are manufacturing elderflower cordial made from local elderflowers. We then blended both ingredients with our Dry Gin and gave it a couple of months so that we can collect most of the sediment at the bottom of the tank. As always, we do not chill-filter, nor add anything unnatural, before bottling this liqueur at 19% vol.

Tasting
Notes

Nose

The nose is highly aromatic, a combination of honey scented elderflower intermixed with fresh citrus aromas, dominated by floral notes and leaving a vast profile of spring smells.

Palate

Beautifully mirroring the olfactory impressions. The first sip is presenting itself rather sweet, it is then cut by a crisp acidity and hints of bitterness which can be traced back to the grapefruit juice.

Finish

A dense flavour profile is dominating your mouth for a while. The finish is an everlasting mixture of sweet & bitter, characterised by the classic aromatics of our Dry Gin.

Serving
Suggestions

Opyos Citrus & Elderflower Gin Liqueur is best enjoyed chilled or on the rocks. If you want to go for a longdrink, it is best paired with ginger beer, opening the entire flavour profile. If you want an alternative aperitif, add 6cl of our Sloe Gin to your Crémant (sparkling wine) and you have the perfect combination between acidity and sweetness.
